Pakora” (also spelled “Pakoda” or “Pakodi”) is a popular Indian snack known for its crispy texture and flavorful taste. It consists of various ingredients, primarily vegetables such as potatoes, onions, spinach, cauliflower, or paneer (Indian cottage cheese), dipped in a spiced chickpea flour batter and deep-fried until golden brown.

Pakoras, a delightful Indian snack, are crispy, golden fritters bursting with flavor and spice. To prepare this delectable dish, begin by mixing chickpea flour with an array of spices such as turmeric, cumin, coriander, and chili powder in a bowl.

Serve these fragrant pakoras hot with mint chutney or tamarind sauce for a tantalizing snack that’s perfect for any occasion. Here’s basic recipe for making various type of pakoras:

Cabbage Pakora

Ingredients:- Cabbage 1 whole, green chillies, onions, gram flour, salt and frying oil.

Method:- Shred the cabbage and boil it a little. Now drain the water. Then grind onions and green chillies in this paste, mix it with salt and besan and make it like an onion. Now put oil in the pan. When the oil is hot, remove the cabbage from the head little by little like pakora and fry it when it turns brown. Serve hot with tomato sauce and salad.

Spinach Pakora

Ingredients:- Spinach 100 grams, chickpeas 1 cup, small garlic 1, ginger half inch, onion 1, green chillies 6, salt to taste, oil 1 cup.

Method:- Soak chickpeas and grind them, finely chop onion, ginger, green chillies, garlic, and spinach, drain the water and put them in the dalbatas. Season with salt to taste. Heat oil in a pan and fry a little of the mixture in the oil. Fry like onions.

Chicken Pakora

Ingredients:- Chicken meat-1 kg, ginger-2 pieces, gram flour-1 cup, small cardamom-8-9 pieces, cinnamon-3-4 pieces, cloves-4-5 pieces, garlic-10-12 cloves, green chillies-5 – 6, Cumin- 1 tsp, Chilli powder- 2 tsp, Coriander powder- 2 tsp, Oil and salt-as needed.

Method:- Boil chicken pieces, remove bones and cut into small pieces. Grind all other ingredients except oil, salt and besan. Rub those batter spices well on the chicken pieces and coat it with gram flour. Add little water if necessary.

When the spices, besan and chicken pieces are well mashed, keep it like that for 15-20 minutes. When the oil is hot in a wok, fry a little of the mincemeat in the strained oil until brown. Slice and dice the tomatoes and serve with onions.

Egg Pakora

Ingredients:- Eggs-5, For filling-Raw onions-2, Chopped coriander leaves-1 tbsp, Spice powder-siki tea-spoon, Gram flour-8-9 tbsp for gola, Salt-as per quantity. For frying – groundnut oil. Gram flour-half table spoon, Mustard oil-little, Green chilli-1, Ginger-half inch piece, Chilli powder-one tip.

Method:- Boil the egg, open it, cut it in half and keep the yolk aside. Dry roast gram flour. Finely chop the cilantro leaves and green chilies. Grind gram flour fried with yolk, green chillies, coriander leaves, garam masala powder, little mustard oil and salt as needed and knead well. Fill the egg white shell with this yolk filling.

Mix gram flour with water and make balls. Add ginger paste, chilli powder and salt as needed and whisk again. Make a ball and keep it for a while. The shell should not be too dark or too thin. Now put oil in the pan and when it is hot, dip the fried egg pieces in the besan balls and fry them in the strained oil. Add some coriander leaves chutney while serving.

Ingredients:- Minced meat-500 gms, Onion-2 cut lengthwise, Garam masala powder 1-spoon, Turmeric 1-spoon, Chilli- 1-spoon, Garlic 4-5 cloves, Ginger 10gm, Salt to taste, Toast bread 2 slices soaked in water , 2 eggs, 1 spoon of pepper, oil as needed, but want it to be odorless.

Method:- Mix all the ingredients together well. Now make small balls. Flatten the balls with hand pressure and fry them in filtered oil. To be deep fried. Once fried, bake in the oven for 10 to 15 minutes. Then serve. You can also give a salad. Pakora is ready to surf.
